Is there a mustard pickle recipe using green&yellow beans and/or cucumbers?

I have already made dill pickles %26amp; bread %26amp; butter pickles. now I want to make a relish or similar to put on sandwiches. At the moment i have too many cucumbers and green%26amp;yellow butter beans so want to use them.Is there a mustard pickle recipe using green%26amp;yellow beans and/or cucumbers?

Mustard Pickles





1 + 1/2 quarts sliced cukes


1 pint sliced onions


1 pint sliced carrots


1 quart cut green beans


1 quart cauliflowerets


1/2 cup chopped red pepper





1/2 cup pickling (coarse) salt





1 pint vinegar


3/4 cup water


2 cups sugar


1 + 1/2 Tbsp celery seed


1/2 tsp ginger


1 Tbsp. turmeric


1/2 cup flour


2 Tbsp mustard powder





Place cukes and onions in large glass, stainless steel or enamel bowl.


Sprinkle with pickling salt. Let stand at least one hour.





Meanwhile, cook remaining veggies until tender crisp. Drain well.





Drain cukes %26amp; onions mix. Rinse with cold water. Drain again.





Prepare sauce:





Place vinegar, water and sugar in a large pot. Mix dry ingredients


together and whisk a little at a time into the vinegar mixture. Cook until


thick, stirring often. Add all veggies and bring to full boil.





Pour into sterilized jars, seal and process in a boiling water bath 10


minutes for pins or 15 minutes for quarts.





Makes 8 pints.

    INGREDIENTS


    2 1/2 pounds fresh green beans


    2 1/2 cups distilled white vinegar


    2 cups water


    1/4 cup salt


    1 clove garlic, peeled


    1 bunch fresh dill weed


    3/4 teaspoon red pepper flakes (optional)





    Sterilize 6 (1/2 pint) jars with rings and lids and keep hot. Trim green beans to 1/4 inch shorter than your jars.


    In a large saucepan, stir together the vinegar, water and salt. Add garlic and bring to a rolling boil over high heat. In each jar, place 1 sprig of dill and 1/8 teaspoon of red pepper flakes. Pack green beans into the jars so they are standing on their ends.


    Ladle the boiling brine into the jars, filling to within 1/4 inch of the tops. Discard garlic. Seal jars with lids and rings. Place in a hot water bath so they are covered by 1 inch of water. Simmer but do not boil for 10 minutes to process. Cool to room temperature. Test jars for a good seal by pressing on the center of the lid. It should not move. Refrigerate any jars that do not seal properly. Let pickles ferment for 2 to 3 weeks before eating.
    Okay, I also make a marinated Italian green bean dish. Drain a can of beans, well, place in a bowl with salt, pepper, garlic powder, pinch of oregano, lemon juice ( or a dash of vinegar and olive oil. Toss to coat well, and allow to sit several hours, then serve.

    Do you have a favorite plain jelly-roll that you like? Simply add two tablespoons of green tea powder to it, and reduce the vanilla (if any). You can buy canned or vacuum packed bean paste (or even just the beans are nice! -- stir in with the whipped cream). And the whipping cream you can also buy ready-made, or you can make it yourself.





    Take one cup of VERY cold cream (you might even put the bowl and the beaters in freezer for a half hour), add one or two tablespoons of sugar. Whip for 5 to 8 minutes, and add a little vanilla. You could even add some green tea powder, but I think the contrast makes the cake lovely.





    If you don't have green tea powder, take a good green tea, and whiz it in your blender until it is powdered. You may want to seive it to remove any larger tea leaves.

    Yes it is very yummy! I sometimes add green tea powder to my icebox cream cheese cake and it tastes good too. Here is the photo of green tea roll cake.

    I first tried it in Tokyo a few years ago (bought some for my family), then I have tried another similar cake roll in Grand Hyatt Hong Kong (their dessert buffet is excellent!).

    3 eggs, seperated


    1 cup sugar

    Confectioners' sugar (icing sugar)


    1 cup whipping cream, (add sugar)


    4 tbsp red bean paste (you can find canned red bean paste in Japanese gocery store)





    Beat egg yolks several minutes, until thick and very yellow. Gradually beat in sugar (about 3/4 cup). On low speed add water, vanilla and green tea powder. In separate bowl, beat the egg whites with a pinch of salt, add 1/4 cup sugar and beat again till the egg whites very stiff peaks.


    In separate bowl, combine flour, baking powder and salt. Gradually add dry ingredients to egg yolk mixture then fold in 1/2 of the meringue until smooth then fold in another 1/2 of the meringue carefully. Pour into a greased and lined 15 x 10 x 1 inch tray (place waxed paper in tray then grease the waxed paper). Bake at 375 degrees for 8 to 12 minutes.


    Tip cake onto a tea towel on which you have sprinkled confectioners' sugar. Remove the waxed paper and while hot, roll the cake and towel, from the narrow end. Cool on wire rack. When cool, whip the cream (sweeten and mix with red bean paste), unroll the cake, remove towel, spread red bean cream on cake and roll back up. Chill for 2 hours. Sprinkle icing sugar on top, cut into pieces. Enjoy!

In a large bowl, beat together sugar, oil, and eggs until smooth. Stir in 1 1/2 teaspoons vanilla. Beat the yogurt into the flour mixture just until incorporated. Pour batter into prepared pans. Bake in the preheated oven for 30 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool on wire rack for 30 minutes before removing from pans.





    To make Green Tea Frosting - Sift together confectioner's sugar and matcha. In a medium bowl, combine tea mixture with butter, cream cheese, vanilla and milk. Beat with an electric mixer until smooth.





    To assemble the cakes - When the cakes are completely cooled, put one layer on a flat serving plate. Spread a thin layer of frosting over it. Place the other layer of cake on top, and spread frosting to cover the top and sides of cake. Dust with matcha if desired. Serve cold or at room temperature. Makes one 2 layer 9 inch rounds or one sheet.

    String beans/green beans-need a good recipe?

    I know the basics, but I want some ideas on seasoning them - how do you cook fresh string beans?String beans/green beans-need a good recipe?
    I don't usually eat green vegetables. But I can cook the hell out of them. This is a really not a bad recipe. I have made this for a few people and they are amazed.





    Fried French Green beans.





    Heat a frying pan


    put a little olive oil in the both heat it up. add


    a table spoon of crushed garlic


    a dash of oregano


    a dash of Basil


    Small Sliced roasted pepper (sliced up into thin slices)


    heat that all up and when you can smell the garlic and it starts to brown a little


    dump a can of drained French Style String beans in (Rinse them off first) and heat them up continuously stiring them





    Do all of this over a medium heat...

    For string beans, I usually brown a bit of procuitto in just a bit of olive oil and toss the beans in for a few minutes so that they are still crunchy (you can cook them longer if you like them softer). I add kosher salt, a bit of cracked white pepper, and serve them sprinkled with toasted pine nuts.





    For greens, maple bacon is the way to go. I brown a bit of the bacon, toss the greens in and let them wilt. Salt, pepper, and to the table they go. Or, sometimes, I just sautee them for a couple of minutes and add a bit of lemon zest, salt and pepper. Both are great.
    Look on the back of the Campbell's cream of mushroom soup for the green bean casserole, it is delicious and very simple, gives you a little something extra than just green beans. You can also try greenbeans with almond slices, butter and garlic, very tasty. Hope this helps.

    I've eaten this banchan in a Korean restaurant here in Mexico, so I'm not sure if they're typical of Korean cuisine.





    They're caramelized green beans, thin, sweet, chewy, served cold.

    1 pound (2-3 large handfuls) fresh green beans, washed, trimmed, and cut in half


    1 medium onion, cut in half and then sliced into thin strips


    1/3 cup water or Vegetable Broth


    1 tablespoon naturally brewed soy sauce


    1 tablespoon rice vinegar





    Directions:





    Steam green beans until tender - around 8-12 minutes.


    While green beans are steaming, cook onion over medium heat with water or vegetable broth in a large pan. Cook for 5 minutes or until tender. Turn the heat to between low and medium and add rice vinegar and soy sauce. Add green beans and toss slightly to mix green beans in with onions. Cook green beans and onions together for 2-3 minutes to allow soy sauce and vinegar to evenly coat all vegetables.

    1 can (15 oz.) garbanzo beans

    1 (15 oz.) pkg. smoky cocktail sausages


    4 green onions, chopped


    1 1/2 c. cherry tomatoes, halved


    1 avocado, peeled %26amp; sliced





    Drain and rinse beans, place in a bowl and pour 1/4 cup dressing over beans. Chill. Slice sausages lengthwise and brown in frying pan. Make a bed of lettuce in salad bowl. Add onions, cheese and sausage to beans. Spoon onto lettuce. Ring with tomatoes and chips. Top with avocados add remaining dressing.

    I am about to start on the season when it is Beans for breakfast, beans for lunch, and beans for supper. Occasionally alleviated by the glut of courgettes and petit pan squashes.


    I am posting this in the ethnic cuisine section as I believe they are used quite a lot in Mexican and Greek cooking, but I have never come across them in Asian or Chinese cookery.


    I am a keen cook, but do get a bit fed up of beans with cheese and chilli sauce.

    Hmmm... They'd probably be really good as tempura. Not sure where you are but tempura batter is pretty cheap (make sure you make it with iced water). Dip the beans in the batter and deep fry quickly.. equally great for courgette, takes a few attempts to get the batter right but worth it - mix some soy sauce and wasabi to dip them in.
    Try Three Bean Salad





    1 (8 1/2 oz.) can lima beans


    1 (8 oz.) can cut green beans or fresh beans


    1 (8 oz.0 can red kidney beans


    1 med. onion, thinly sliced and separated into rings


    1/2 c. chopped green pepper


    2/3 c. vinegar


    1/2 c. salad oil


    1/4 c. sugar


    1 tsp. celery seed


    Drain the canned beans. In a large bowl combine the lima beans, green beans, red kidney beans, onion rings, and green pepper. In a screw top jar combine vinegar, salad oil, sugar and celery seed; cover and shake well. Pour vinegar mixture over vegetables and stir lightly. Cover and chill at least 6 hours or overnight, stirring occasionally. Drain before serving.





    Quick version





    Prepare Marinated Three Bean Salad as above, except substitute one 8 ounce bottle Italian salad dressing for the vinegar, salad oil, sugar and celery seed. Continue as directed; marinate in refrigerator for 1 to 1 1/2 hours. Drain before serving. Makes 6 to 8 servings.
    Well to be honest there is only so much u can do with a runner bean-- before it runs off!!!





    Seriously though-- other than boiling or steaming then adding chilli onions and tomatoes its really hard to eat it just on it's own.. Very boring i would imagine-- unless u are having it as an addition to the breakfast, lunch and dinner. huh!!!

    Blanch the green beans. Steaming them for 3 minutes (tender but firm) for 3 minutes will do. Shock them in ice water and drain.





    Combine the vinegar and water, and bring to a boil. Toss the lid flats and rings into the vinegar water.





    Pack the beans into hot, sterilized pint Mason jars. To each jar, put a clove of garlic and a couple of sprigs of dill at the top, and add a teaspoon of salt.





    Top off the pints with the vinegar liquor, leaving about a half inch of headroom. Add a lid flat, and tighten the ring snugly but not over-tight.





    Process the jars for 10 minutes, and pull from the bath and set on tea towels to cool a little bit. Once the top ';pops';, unscrew the ring, and toss it in a bowl of fresh cool water, to debrine it. When the jars have reached room temperature, you probably want to wash off the jars.





    Label with the date and contents. I usually wait a month or two to start using them, but it's up to you. They'll keep three years, possibly a lot longer.Does anyone have a tried and true recipe for pickled green beans?

    LOUISIANA GREEN BEAN PICKLES





    2 lb. green beans, trimmed


    2 c. cider vinegar


    1 1/3 c. sugar


    1 1/2 tbsp. pickling spice, tied in a cheesecloth


    1 tbsp. whole peppercorns


    1 bay leaf


    1 clove garlic


    1 lg onion, chopped


    1 sm. red bell pepper, chopped and seeded


    3 lg. dill sprigs





    Cook beans in salted water 1 minute. Rinse under cold water, drain. Place vinegar, sugar, pickling spices, peppercorns, bay leaf, and garlic in saucepan. Heat to boiling. Simmer uncovered 10 minutes. Discard spices. Add onion and bell pepper. Cook 10 minutes longer. Pack beans upright in 3 sterilized 1-pint jars.


    Divide onion and peppers between jars. Place a sprig of dill in each jar. Pour in hot liquid up to 1/2 inch of top. Seal the jars and process hot water bath 15 minutes.
    Dilly Beans





    2lbs green beans


    1/4 cup canning salt


    21/2 cups vinegar


    21/2 cups water


    1 tsp cayenne pepper--divided


    4 cloves of garlic--divided


    4 heads dill--divided





    Trim ends off beans. Combine salt, vinegar and water in a large saucepan. Bring to boil. Pack beans lengthwise into hot jars, leaving 1/4 inch headspace. Add 1/4 tsp cayenne pepper, 1 clove garlic and 1 head dill to each pint or 1/2 tsp. cayenne pepper, 2 cloves of garlic and 2 heads dill in each quart. Ladle hot liquid over beans, leaving 1/4 inch headspace.


    Remove air bubbles. Adjust two piece caps.





    Process pints or quarts for 10 minutes in a boiling water canner.


    Yeilds: about 4 pints or 2 quarts.
    I have only tried this once and was not overly thrilled with the results! Seems I can can tomatoes and regular pickles, but not the green beans so much! So sorry I can't give you one that I've actually made %26amp; like, but if you click on the link below, you will find the next recipe that I'm going to try!     Fried Green Beans





    Batter:


    1 egg


    1 cup ice water


    1 cup all purpose flour


    cleaned trimmed green beans ( and any veggie- mushrooms are great like this!)





    Beat an egg in a bowl. Add ice water in the bowl. Be sure to use very cold water. Add sifted flour in the bowl and mix lightly. Be careful not to overmix the batter.





    Heat vegetable oil in a deep pan to 340-350F degree.


    Lightly dip gren beans in the batter and immediately fry them until crisp. Drain on a rack.


    Serve right away with ranch dipping sauceAnybody have recipe for fried green beans?

    Pan fried Green Beans


    1 pound fresh green beans, trimmed


    3 tablespoons light soy sauce


    1 tablespoon balsamic vinegar (opt) but really great if you have it.


    1 teaspoon white sugar


    2 tablespoons sesame oil


    2 teaspoons minced garlic








    Place the green beans in a large saucepan or pot with one inch of water. You may place them in a steamer insert if you have one. Bring to a boil, cover and cook for 5 minutes, they should still be firm and bright green.


    In a small bowl, stir together the soy sauce, balsamic vinegar and sugar; set aside.


    Heat the sesame oil in a large skillet over medium heat. Add garlic and cook until starting to brown. Add the green beans and stir to coat with the oil. Stir in the soy sauce mixture and simmer for a couple of minutes uncovered to reduce the sauce. Transfer the beans to a serving dish and pour the sauce over them

    If you have good fresh green bean, please don't cook them to death. They have a wonderful, subtle flavor.





    If you want to use your bacon grease, put about 2 tablespoons in a skillet. Throw in your green beans and toss to cover with the bacon fat. Add just enough water or broth to keep the pan from drying out (and your beans from burning). Salt and pepper to taste. Cook over low heat until the beans reach desired tenderness. I often add a couple slices of bacon to the pan and cook it a couple of minutes before adding the green beans and broth. Either way you do this it takes maybe 10 minutes.





    I also love green beans with olive oil and garlic. Prepare same as above. Toss in one or two cloves of minced garlic when you add water or broth.

    Pick ends off green beans and snap or cut them into 1-inch pieces. Meanwhile, slowly, over medium-low heat brown bacon in wok or medium size covered frying pan. Add the beans and stir occasionally until all of the beans have changed color (the green gets brighter and they look sort of opaque). Add broth or water and sprinkle on salt and pepper. Cover and simmer for 10-15 minutes (depends on how done you like your beans). Serve immediately or remove from heat and rewarm when ready to serve.
    You can make a much nicer version of the old green bean casserole by cooking the beans in boiling water until they are tender-crisp. Slowly saute a good amount of bermuda onions until they are soft, brown and caramelized. Put the beans in the pan and mix with the onions until the beans are heated through. Add a dash of thyme--yummy.

    These beans cook in just a few minutes. Do not be turned off by the withered appearance of the beans, they are very tender and full of flavor. I prefer to use fresh green beans, but frozen can be used as well. Only use 2 tablespoons of water if using frozen beans.





    2 teaspoons peanut oil


    1 pound green beans, ends snipped


    1/2 inch slice ginger root, peeled and grated


    1/4 cup water


    1 teaspoon brown sugar


    1 teaspoon dark soy sauce


    4 chopped scallions





    Heat a wok over medium heat and add the oil. Stir fry the green beans and ginger root for one minute. Add the water and sugar and reduce the heat. Simmer for five minutes, or until the beans are tender. Stir in the soy sauce and scallions. Serve hot.

    Fry several pieces of bacon. Remove bacon and crumble. Wash and string fresh green beans, leave whole. Add beans to bacon drippings, and add water. Steam for 12 minutes. Set aside.


    Brown fresh mushrooms which have been sliced in butter, add a 1/2 teaspoon of vermouth and a sprinkle of garlic salt. Lay beans on top of sauteed mushrooms and let reheat.





    Toast almonds whole by placing in a shallow skillet over medium heat. Season with a sprinkle of garlic salt. Do not use oil or butter, toast them dry.





    To serve, arrange beans on serving dish, top with mushrooms and toasted almonds.

    2 tablespoons butter


    3 tablespoons flour


    1 cup milk


    1/2 cup shredded Cheddar cheese

    1/2 cup liquid from drained green beans


    1/8 teaspoon pepper


    1/2 teaspoon salt


    1/4 cup bread crumbs tossed with 1 tablespoon melted butter





    PREPARATION:





    Cook beans; drain and reserve 1/2 cup of cooking liquid (Heat through if using canned beans). Melt 2 tablespoons butter in a saucepan; blend in flour. Add milk slowly and cook until thickened, stirring constantly.





    Add cheese, mustard, and reserved cooking liquid. Stir until cheese melts. Add salt and pepper. Place alternating layers of green beans and sauce in a greased casserole, then top with buttered crumbs. Bake at 350脗掳 for 30 minutes.

    3 tbsp. olive oil


    1 tbsp. instant toasted onion (optional)





    Drain beans. Heat vinegar and pour over beans. When beans cool, add beau bonde seasoning, dill weed and olive oil. Toss lightly to combine thoroughly. Chill well, preferably over night. Just before serving, sprinkle with toasted onion.





    If you dont have beau monde seasoning you can use a little celery salt, onion salt, and garlic powder

    I have never eaten at Dixie Cafe, but this is a classic Southern preparation of green beans.


    16 ounce bag frozen green beans, or 2 (14 oz) cans green beans, do not drain


    4-6 slices bacon


    1 large onion, sliced large slices


    1 dash red pepper flakes (optional)


    salt and pepper


    Put green beans in pot. If canned add juices, if frozen add water enough to see but not cover beans. Cook on medium heat. Fry bacon until cooked but not too crisp; drain on paper towel. Cut onion in large (thick) slices and break rings apart add to beans. Crumble or rip bacon apart add to beans. Add spices to taste.


    Let cook for a 2 hours on low heat.

    Heirloom Potatoes and Tuscan Kale





    1 lb Romano green beans, trimmed and broken in half


    1 lb heirloom potatoes (such as Russian banana)


    陆 lb Tuscan lacinato kale


    12-15 pearl onions


    1 cup cream sauce (2 tablespoons butter, 2 tablespoons flour, 1 cup milk)


    陆 cup freshly made basil pesto


    Bay leaf


    Salt and pepper to taste





    1. Chop the kale into small, thin strips after removing most of the tough, central vein in each leaf. Simmer kale along with onions, bite sized beans and potatoes with bay leaf until potatoes are nearly done. Drain and remove bay leaf.





    2. While vegetables are simmering, make cream sauce by blending 2 tablespoons butter with 2 tablespoons flour and slowly blending in 1 cup milk. Then stir in half a cup or more of freshly made pesto.





    3. Pour pesto cream sauce over vegetables and simmer on low for several more minutes until potatoes are just done.

    1 pound fresh green beans, leave whole


    1/2 cup red pepper, cut into julienne strips





    Lemony Vinaigrette:


    1 tablespoon fresh parsley, minced

    2 tablespoons fat-free yogurt


    1 tablespoon chives or green onion with green top, finely chopped


    1/4 teaspoon each, salt and black pepper


    1/2 cup canola oil or safflower oil





    1. Wash green beans and remove the stem end only, leave whole. Steam or blanch green beans for 3 minutes. Toss with julienne red pepper.





    2. Make vinaigrette in a small bowl by combining parsley, lemon juice, yogurt, and chives. Set bowl on a wet towel to avoid slippage. Add oil in a steady stream, whisking constantly until vinaigrette is blended. Chill.





    3. Toss green beans and red peppers with enough vinaigrette to coat vegetables, about 1/3 cup. Serve warm. Leftover vinaigrette can be used as a salad dressing. Store in the refrigerator for up to one week.

    I come from along line of county cooks it doesnt take alot to make great green beans you can use frozen or fresh (dont buy them in a can) add a couple of teaspoons of bacon grease, about a tablespoon of dehydrated onions (I think they taste better than fresh in the beans) salt and pepper to taste and cook the heck out of them. To make good old fashioned green beans they cant be blanched or crunchy it will take a good 2 hours of simmering to make them good. Oh forgot the water just add enough to cover them that should last throughout the cooking but check every 30 minutes and add if necessarySeasoned green beans? Looking for an old fashioned recipe for green beans with lots of seasoning.?

    Roasted Green Beans With Peppers %26amp; Onion














    1 lb. whole frozen or fresh green beans, ends trimmed


    1 red pepper, cut into thin strips


    1 yellow pepper, cut into thin strips


    1 large onion, cut into thin strips


    1/2 cup KRAFT Balsamic Vinaigrette Dressing


    1/2 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese











    PREHEAT oven to 400掳F. Toss vegetables with dressing in large roasting pan.


    BAKE 30 min. or until vegetables are tender, stirring after 15 min.


    SPRINKLE with cheese. Bake an additional 2 to 3 min. or until cheese is melted.

    1 1/2 lbs. green beans


    4 oz. fresh Shitake mushrooms (optional)


    1/2 cup grated Parmesan cheese (optional)


    1/4 cup extra virgin olive oil


    1 tablespoon butter


    1/4 cup fresh Italian parsley, chopped


    pinch of fresh basil and oregano, minced


    pinch of red pepper flakes


    1/2 cup plain bread crumbs (optional)


    8 cloves garlic, peeled


    In a saucepan, bring 5 cups water to a boil with 1 tablespoon salt. Add fresh green beans (strings and ends removed). Boil beans for 4-5 minutes, until tender but not overcooked. When tender, shock beans in a bowl of ice water to prevent overcooking and retain bright green color. Remove after 30 seconds and let drain in colander.


    In a large heavy bottom skillet, heat olive oil with cloves of garlic and mushrooms. Saut茅 until garlic becomes tan, but not brown. Mash garlic into oil with the tines of a fork. Add cooled beans, parsley, butter and remaining ingredients. Toss with cheese and bread crumbs (optional) and serve when butter has melted.


    Cook's Note: Garlic cloves may be removed before serving, or left in for added flavor, as desired. Garlic can be pureed or pressed through a sieve, but this will eliminate the ';roasted'; garlic flavor which characterizes this dish. May be served either warm or cold (if served cold, omit butter).


    Variations: A strip of lean bacon or Pancetta may be saut茅ed in olive oil before adding garlic, then crumbled in. For a piquant flavor, the beans may be served cold, as a salad, and dressed with a few drops of freshly squeezed lemon or balsamic vinegar.
    Seriously,,, this is the only way to cook them... this was passed down from my grandma to my dad and now I make it... yep...it sucks all the nutrients out....but who cares LOL........It's the holidays after all... we want FLAVOR!!!








    OLD - FASHIONED GREEN BEANS





    4 to 6 slices bacon


    1 lg. onion, chopped


    1 1/2 to 2 lbs. green beans, snapped


    1/2 c. water


    Salt and pepper to taste


    6 to 8 new potatoes (optional)


    1 cube chicken bouillon (optional)


    1/4 tsp. sugar (optional)





    In a heavy pot, fry the bacon until crisp over medium heat; remove the bacon and drain. Add the onion to the bacon grease and saute until limp. Add the green beans, water, salt, pepper, and any of the optional ingredients. Simmer the mixture, covered, for 45 minutes, or until tender. Transfer the green bean mixture to a serving dish and crumble the bacon over the top of the beans.

    Description:





    Ingredients: 1 pound Idaho or Yukon Gold potatoes, scrubbed but unpleeled


    1 small red onion, sliced thin (about 1 cup)


    1/3 cup chopped fresh Italian parsley

    1/3 cup extra virgin olive oil, or as needed

    Try this salad as it was made traditionally, without vinegar. If you feel the capers don鈥檛 supply the necessary zing, sprinkle a little wine vinegar over the salad and toss it again.     Directions: Pour enough cold water over the potatoes in a medium saucepan to cover by three fingers. Bring to a boil over high heat, then lower the heat slightly to a gentle boil. Cook until the potatoes are tender when poked with a paring knife or skewer, 20 to 35 minutes, depending on the size and type of potato. Drain the potatoes and let them stand until cool enough to handle, but still quite warm.

    Oriental Green Bean


    1pound green beans


    Sauce:


    1 tablespoon bean sauce (available at Asian markets; Koon Chun is a good brand, or you can substitute hoisin sauce)


    1 tablespoon dark soy sauce


    2 teaspoons Chinese rice wine or dry sherry


    1 1/2 teaspoons sugar


    Other:


    1 tablespoon chopped garlic


    1 tablespoon chopped ginger


    2 scallions, chopped, white part only


    1/2 teaspoon chili paste


    3 tablespoons vegetable or peanut oil for stir-frying, or as needed





    PREPARATION:


    Wash the green beans and drain thoroughly. Trim the ends and cut on the diagonal into pieces approximately 2 inches long.


    Combine the sauce ingredients and set aside.


    Heat the wok on medium heat and add 2 tablespoons oil, drizzling the oil down the sides of the wok. When the oil is hot, add the beans. Stir-fry for 7 - 10 minutes, until their skins pucker and turn brown and the green beans are tender without being mushy (I find 10 minutes works very well). Remove the beans from the wok.


    Heat 1 tablespoon oil in the wok on medium-high heat. When the oil is hot, add the chopped garlic, ginger and scallions. Stir-fry briefly for a few seconds until aromatic. Add the chili paste.


    Add the sauce and the green beans. Toss the ingredients together and serve hot.
    Stir Fried Green Beans Recipe


    Could easily use this method for a variety of veggies.





    1.5 lbs green beans


    2 Tbl dry sherry


    3-4 cloves garlic, minced


    2-3 tsp ginger, minced


    1/2 cup chicken-flavored stock


    2 T soy sauce


    1 T sherry


    couple drops sesame oil


    1 - 2 tsp cornstarch


    4 scallions, sliced





    Blanch green beans in boiling water for 3 minutes.


    Drain, run under cool water to stop cooking and pat dry.


    Heat wok over medium high heat.


    Add sherry, garlic and ginger.


    Stir for a few seconds.


    Add green beans and stir for a minute.


    Add stock, soy sauce, sesame oil.


    Combine sherry and cornstarch.


    Add to wok.


    Stir.


    Reduce to simmer and cook for another 3 minutes until sauce is thickened.


    Stir in scallions and serve.

    I make mine by cooking up my bacon or ham and then setting aside and putting a little onion into the bacon drippings and carmelizing them. Then I add my green beans and cook until aldente.     no, sorry I don't, maybe it's on the net but when I think of carmelized I think of carmel (as in candy) and I don't think carmelized is what you're referring to in beans. I would think when they said carmelized they meant just carmelized in butter in the frying pan (like you would carmelize onions till you can see thru them). Since the ';french bean scare'; recently (where they took several brands off the shelves) I'm not thinking ';beans'; today. Why not ask the office staff what they thought was in those beans.

    Green Beans with Caramelized Onions and Almonds


    Kosher salt


    3 pounds green beans, trimmed of stem end


    1/2 cup skin on sliced almonds


    3 tablespoons unsalted butter


    5 tablespoons extra-virgin olive oil


    2 large onions, sliced thin


    2 tablespoons chopped fresh thyme leaves


    Freshly ground black pepper





    Fill a large high sided skillet with some water, adding enough to be just shy of the rim of the pan by about 1 inch. Place over high heat and bring up to boil; add a big pinch of salt and the green beans. Cook for about 5 minutes, the beans should still be crisp. Drain the beans and then run them under some cold water to stop them from cooking. Reserve the beans while you start the onions.


    Return the skillet you cooked the beans in to the cook top over medium heat. Add the almonds and toast stirring every now and then until golden, about 3 to 5 minutes. Remove the almonds from the skillet and reserve. Return the skillet to the heat and add the butter and olive oil and heat until the butter has melted. Add the onions, season with salt and pepper, and cook stirring frequently until the onions caramelize, 20 to 25 minutes. Add the thyme, and cook for another 5 minutes. Add the cooked cooled green beans and almonds, and stir well to combine. Season with salt and pepper, to taste.

    6 oz. boneless, skinless chicken breasts, very thinly sliced 1/8-inch thick


    7 1/2 tsp soy sauce


    3/4 tsp Asian spice blend (see below)


    1/4 cup dried shrimp (found in Asian markets 鈥?optional but they are yum)


    1/2 cup hot water


    1/4 cup vegetable oil


    1/2 pound green beans, stem ends trimmed, cut into 3-inch pcs


    1 TBS minced garlic


    1/4 cup roughly chopped cashews


    2 TBS hoisin sauce


    1 tsp sesame oil (don't leave this out!)


    1 TBS lightly toasted white sesame seeds


    1 1/2 tsp srirachi (roasted garlic-red pepper puree)


    1/4 tsp red pepper flakes


    Chopped green onions for garnish


    Asian Spice Blend:


    1 TBS 5-spice powder

    Directions


    In a bowl, combine the chicken, 4 1/2 tsp of the soy sauce, and Asian spice blend. Toss to coat and let sit for 10 minutes.


    In a separate bowl, combine the shrimp and water. Let sit for 15 minutes. Drain and roughly chop. In a large wok or saut茅 pan, heat the oil over high heat. Add the beans and shallow fry until wrinkled, stirring, about 2 minutes. Remove and drain on paper towels. Remove all but 1 TBS of the oil and add the garlic and cook, stirring, for 10 seconds.


    Add the chicken and stirring constantly, cook until brown, 1 to 2 minutes. Add the chopped shrimp, greens beans, cashews, hoisin, and last 3 tsp of soy sauce, sesame seeds, srirachi, sesame oil and red pepper flakes. Stir to coat, and cook for 1 minute.

    Green Beans With Sour Cream


    2 tall cans French style green beans drained


    录 cup plus parmesan cheese


    1/3 cup onions


    2 Tbls butter


    2 Tbls flour


    1 cup sour cream


    Cook onions in melted butter until soft not browned. Add flour, green beans and 录 cup parmesan cheese and then sour cream. Mix all well together and put in casserole dish, sprinkle some parmesan cheese on top. Bake in 350% oven for 25-30 minutes
    Here is my favorite green recipe:





    Boil green beans for 3-4 minutes (they should still be crunchy), drain and immediately put in a dish with ice water (keeps their vibrant green color). Drain once cooled.





    To a frying pan add a tiny drizzle of olive oil, and a tablespoon of butter. Once melted, drop in your beans and cook until heated (2 minutes or so). Turn off the heat and top with loads of grated parmesean cheese. Stir to coat the beans in the cheese and serve.
    My mom used to make this for us and I hope you try it it is delicious. In a pot heat enough oil to cover the bottom of the pot. roughly chop an onion and mince a chili, lightly brown in pot. When lightly browned add garlic salt pepper and oregano. Add green beans and 3 tomatoes roughly chopped add a cup of vegetable broth or water, simmer until cooked. This recipe can be made with fresh, frozen. or canned vegetables it is so good that I may have to make some for lunch.

    Green Beans with Bacon-Balsamic Vinaigrette





    2 pounds green beans


    2 bacon slices


    1/4 cup minced shallots


    3 Tbsp. coarsely chopped almonds


    2 Tbsp. brown sugar


    1/4 cup white balsamic vinegar





    Cook green beans in boiling water for 2 minutes. Drain and rinse under cold water. Drain well; set aside.


    Cook bacon in a small skillet over medium-high heat until crisp. Remove bacon from skillet. Crumble; set aside. Add shallots to bacon fat in skillet; saut茅 1 minute. Add almonds; saut茅 1 minute. Remove and let cool. Add sugar and vinegar; stir until sugar dissolves. Add crumbled bacon.


    Pour vinaigrette over beans, tossing gently to coat.





    Yield: 8 servings (serving size: 3/4 cup)

    2 (16 oz) cans whole green beans (or fresh green beans, steamed until nearly tender)


    8 slices of bacon, cut in half (I like the Center cut bacon)


    1 tsp. garlic powder, or to taste


    1/4 cup melted butter


    1/2 cup packed brown sugar





    Preheat oven to 325 degrees.


    Drain beans and arrange into bundles of 5 beans. Wrap each bundle with 1/2 slice bacon. Arrange seam side down in baking dish with sides not touching.





    Sprinkle with garlic powder. Drizzle with mixture of butter and brown sugar.





    Bake for 30 minutes or until bacon is cooked through.

    Creamed Chicken over Beans


    INGREDIENTS





    * 1/4 cup butter or margarine


    * 1/4 cup all-purpose flour


    * 1/2 teaspoon salt


    * 1/8 teaspoon pepper

    * 1/4 cup milk


    * 1 teaspoon chicken bouillon granules


    * 2 cups cubed, cooked chicken


    * 1 (16 ounce) package frozen cut green beans, cooked and drained

    1. In a saucepan, melt butter. Stir in flour, salt and pepper until smooth. Gradually add water, milk and bouillon. Bring to a boil; boil and stir for 2 minutes. Add the chicken and heat through. Serve over beans. Sprinkle with paprika if desired.

    1 bag frozen (16-20 oz) of green beans





    Mix cans together and add black peppers, and other seasoning as desired.

    Italian Green Bean Chicken





    2 tablespoons olive oil


    3 cloves garlic, chopped


    1 pound skinless, boneless chicken breast halves - cubed


    2 (14.5 ounce) cans diced tomatoes


    2 tablespoons minced fresh basil


    1 pound fresh green beans - rinsed, trimmed and steamed





    Heat oil in a large skillet over medium high heat. Add garlic and saute until aromatic oils are released, then add chicken and cook through until no longer pink.


    Stir in tomatoes and basil and bring to a boil; reduce heat to low and simmer for another 3 to 5 minutes. Finally, stir in steamed beans and serve
    I make potato salad with green beans. Cook the green beans just a little bit so they are still a little crunchy. I usually do it in the microwave. Then boil small red potatoes and when they are done cut then in half or quarters depending on how bid they are. Put the green beans and potatoes in a bowl together and add:





    Feta cheese


    Red onion sliced


    Greek salad dressing (any brand is fine)





    This is best if is sits in the fridge overnight before you eat it. This is meant to be served cold and it is good at a barbecue or potluck because most people have never had it before. I usually leave the green beans whole or just broken in half when I make this.
    I love new potatoes(red) in my green beans!!


    Just add the potatoes to your green beans and season the way you like and cook. ENJOY!

    i would just chop up approx. 15 ounces of onions from the mesh bag....onions are onions...If you were to use Fresh green beens i think you would have to first steam them or blanch them and then cook them in the green been casserole...

    Servings: Makes 6 servings





    Description:





    Ingredients: 1 pound Idaho or Yukon Gold potatoes, scrubbed but unpleeled


    1 small red onion, sliced thin (about 1 cup)


    1/3 cup chopped fresh Italian parsley


    录 to 1/3 cup tiny capers, drained


    1/3 cup extra virgin olive oil, or as needed


    Salt (preferably sea salt)


    Cracked black pepper (see box, page 000)


    Red wine vinegar (optional)





    Try this salad as it was made traditionally, without vinegar. If you feel the capers don鈥檛 supply the necessary zing, sprinkle a little wine vinegar over the salad and toss it again. Warm salads like this are a nice to take the chill out of a cold cut lunch and go very well alongside grilled fish, chicken or sausages.











    Directions: Pour enough cold water over the potatoes in a medium saucepan to cover by three fingers. Bring to a boil over high heat, then lower the heat slightly to a gentle boil. Cook until the potatoes are tender when poked with a paring knife or skewer, 20 to 35 minutes, depending on the size and type of potato. Drain the potatoes and let them stand until cool enough to handle, but still quite warm.


    Cut the potatoes into 陆-inch slices and set them in a serving bowl. Scatter the onion, parsley and capers over the potatoes, drizzle 1/3 cup of the oil over them and season with salt and pepper. Toss gently until all the ingredients are evenly distributed. There should be enough olive oil to make the vegetables glisten. If not, drizzle in a little more and toss gently. Taste and season with additional salt and pepper and a drizzling of vinegar, if you like. Serve immediately.


    The add-in vegetables that lend themselves best to this preparation are; Swiss chard, Savoy cabbage, white cabbage, spinach and string beans. Prepare any of these choices according to the directions that follow the Braised Swiss Chard with Oil and Garlic on page 000 and substitute them for the string beans.


    Judge when to stir in the 鈥榓dd-in鈥?vegetable based on the timing guidelines below. (If you find you misjudged the cooking time and one vegetable is tender before they other, simply fish the tender vegetable out of the pot, set it aside and return it to the pot when the second vegetable is tender.)


    New Potatoes: You can choose to peel or not peel new potatoes, depending on your preference. Choose small new potatoes, about 1 陆-inches in diameter. Cut any potatoes larger than that in half. New potatoes of this size will take about 25 minutes of boiling to become tender.


    Savoy Cabbage, Green Cabbage, Spinach or Swiss Chard: See the directions for preparing these ingredients that follow the recipe for Braised Chard with Oil and Garlic on page 000.     Chinese Chicken With Green Beans Recipe





    6 oz. boneless, skinless chicken breasts, very thinly sliced 1/8-inch thick


    7 1/2 tsp soy sauce


    3/4 tsp Asian spice blend (see below)


    1/4 cup dried shrimp (found in Asian markets 鈥?optional but they are yum)


    1/2 cup hot water


    1/4 cup vegetable oil


    1/2 pound green beans, stem ends trimmed, cut into 3-inch pcs


    1 TBS minced garlic


    1/4 cup roughly chopped cashews


    2 TBS hoisin sauce


    1 tsp sesame oil (don't leave this out!)


    1 TBS lightly toasted white sesame seeds


    1 1/2 tsp srirachi (roasted garlic-red pepper puree)


    1/4 tsp red pepper flakes


    Chopped green onions for garnish


    Asian Spice Blend:


    1 TBS 5-spice powder


    1 TBS salt


    1 TBS sugar


    1 1/2 tsp ground black pepper


    3/4 tsp cayenne (told ya it wasn't for the faint hearted!)





    Directions


    In a bowl, combine the chicken, 4 1/2 tsp of the soy sauce, and Asian spice blend. Toss to coat and let sit for 10 minutes.


    In a separate bowl, combine the shrimp and water. Let sit for 15 minutes. Drain and roughly chop. In a large wok or saut茅 pan, heat the oil over high heat. Add the beans and shallow fry until wrinkled, stirring, about 2 minutes. Remove and drain on paper towels. Remove all but 1 TBS of the oil and add the garlic and cook, stirring, for 10 seconds.


    Add the chicken and stirring constantly, cook until brown, 1 to 2 minutes. Add the chopped shrimp, greens beans, cashews, hoisin, and last 3 tsp of soy sauce, sesame seeds, srirachi, sesame oil and red pepper flakes. Stir to coat, and cook for 1 minute.


    Remove from the heat and serve immediately, garnished with green onions.Any yummy recipes with green beans?

    Green Beans With Sour Cream


    2 tall cans French style green beans drained


    录 cup plus parmesan cheese


    1/3 cup onions


    2 Tbls butter


    2 Tbls flour


    1 cup sour cream


    Cook onions in melted butter until soft not browned. Add flour, green beans and 录 cup parmesan cheese and then sour cream. Mix all well together and put in casserole dish, sprinkle some parmesan cheese on top. Bake in 350% oven for 25-30 minutes
    Here is my favorite green recipe:





    Boil green beans for 3-4 minutes (they should still be crunchy), drain and immediately put in a dish with ice water (keeps their vibrant green color). Drain once cooled.





    To a frying pan add a tiny drizzle of olive oil, and a tablespoon of butter. Once melted, drop in your beans and cook until heated (2 minutes or so). Turn off the heat and top with loads of grated parmesean cheese. Stir to coat the beans in the cheese and serve.
    My mom used to make this for us and I hope you try it it is delicious. In a pot heat enough oil to cover the bottom of the pot. roughly chop an onion and mince a chili, lightly brown in pot. When lightly browned add garlic salt pepper and oregano. Add green beans and 3 tomatoes roughly chopped add a cup of vegetable broth or water, simmer until cooked. This recipe can be made with fresh, frozen. or canned vegetables it is so good that I may have to make some for lunch.

    American-Chinese style green beans





    Ingredients:





    1 lb fresh green beans.


    2 x green onions, chopped.


    2 x cloves of garlic, minced.


    6 x thin slices of fresh ginger.


    3 tbl of sesame oil.


    1 tsp sugar.


    1/2 tsp salt.


    2 tbl soy sauce.


    1/4 cup water.








    Method:


    Cook the green beans in boiling water(to cover), 3 to 4 minutes; drain and plunge into cold water to stop the cooking process. Drain on paper towels. Cook green onions, garlic and ginger in hot sesame oil in a skillet 1 minute, stirring constantly; add sugar, salt and soy sauce, and cook until sugar dissolves, stirring constantly. Add the green beans and water, reduce heat to medium, and stir-fry for 3 minutes. Serve immediately.

    In a skillet/pan, heat about 3 tablespoons of olive oil or (bacon grease) add the green beans along with some chopped or sliced onion and even small new potatoes and about 1 cup of water (depending on how much stuff is in your pan)....cook til potatoes and beans are done..... add salt and pepper.....these are delicious.....should you use bacon grease, they are even better. serve with hot corn bread...

    yes add a one cup of water throw bacon or ham in the crockpot look and let it cook for for 5 or six hours add some onion for added flavor

    Do you mean the Chinese dish of long (read: green beans) beans in a spicy sauce??? I have that recipe if you want it.....really easy...





    1/2 cup water


    1 pound sliced green beans


    2 tablespoons Asian sesame oil


    2 clove garlic, minced


    1 tablespoon Asian Chili Paste (in the Asian/international section of a well stocked grocery)


    Red pepper flakes, to taste


    Soy sauce, to taste......





    In a skillet, bring water and green beans to a simmer. Cook, uncovered until water evaporates. Drizzle in sesame oil and stir in garlic and red pepper flakes and chili paste to taste.... Toss to coat and cook for 1 minute. Serve hot or cold.

    2 teaspoons sugar


    Hot chili flakes to taste


    1 pound green beans, trimmed

    2 tablespoons grated fresh ginger


    2 tablespoons thinly sliced garlic








    In a small bowl, whisk together the soy sauce, vinegar, sugar, and chili flakes. Set aside.








    Place 1/4 cup water in a large skillet and bring to a boil over high heat. Add the green beans, cover the pan, and cook until the beans are crisp tender, 3 to 4 minutes. Uncover, and drain any water that remains in the pan.








    Add the oil, ginger, and garlic to the beans in the skillet and cook over medium-high heat, stirring frequently, until the beans are lightly browned, about 2 minutes. Do not let the garlic burn. Add the soy mixture to the pan and cook, stirring constantly, until the sauce thickens and glazes the beans, about 2 minutes.
