Thanks!Fresh Green Beans...I need some recipes.?
try browning some chopped bacon in a medium pot, add onions and garlic, sautee until slightly brown, add cubed potatoes and the green beans cover, add 1 cup of water and cook until tender, season generously with salt black pepper and garlic powder =PFresh Green Beans...I need some recipes.?
3 pounds fresh green beans, tips and tails removed

1/4 pound bacon, cut in bite size pieces

1 tbsp. olive oil

1 1/2 to 2 cups chicken broth

Salt, pepper to taste

1 onion, cut into strips

1 pound small red new potatoes

Heat the oil in a large dutch oven or large skillet with a lid and place your bacon in pan over medium heat and cook until bacon has rendered its fat and is crisp. Remove bacon from pan to drain. Add in your green beans and toss to coat in the bacon/olive oil. Add in your seasonings and half of the chicken stock. Cook over medium low heat, covered, for 30 minutes until half done. At the end of 30 minutes add in your onion, new potatoes, reserved bacon and additional stock if needed. Cook, covered tightly for another 30 minutes until potatoes are done. Re-season with salt and pepper if needed.
Saute some bacon.....then add the green beans, cover with water, salt and pepper and simmer about 1 hour on low.

YUM!!!
One of my family's favorite recipes for fresh green beans is to snip off the ends, place them in a crockpot with either tiny new potatoes or larger potatoes cut into quarters or 1/8ths. Cover with water and if you want, add either a chicken or beef boullion cube, or a couple slices of thick-cut bacon (or a tablespoon of bacon grease) or a slice of ham to the pot. Turn on low for 6-8 hours or high for 4-5 and allow beans and potatoes to cook down. Add salt and pepper to taste.
Start by placing your fresh green beans in boiling water for a few minutes. (8-10) Drain them, they put them in a large saute pan with sliced mushrooms, some minced garlic, about a tablespoon of butter, some extra virgin olive oil, and some roasted red bell peppers (You can get the red bell peppers at the store in a jar. Make sure they are in water.) Then just saute till the mushrooms are cooked down and the green beans are tender...

I made this last week with Parmesan crusted pork chops and cream cheese mashed potatoes and my boyfriend loved it...

I see a lot of good ideas here. Let me tell you how this southern country lady cooks fresh green beans.

Wash and trim ends and string beans if necessary. Snap in half.

Put beans in pot with a small amount of water, about an inch of water, NEVER cover green beans with water!! Add a chicken bullion cube, a small amount of sea salt(the bullion cube is salty) about 2 tablespoons of creamery butter,a couple of big pinches of sugar now lay one strip of bacon across the top of your beans ....cove and cook without stirring about an hour or until as tender as you like them.

Make sure you use a heavy pot with a tight fitting lid. Watch that the water does not boil dry.....Once boiling reduce the heat and add a little water if necessary.

BTW...stirring the beans break the up.

Good Luck...
Very simple-- boil 2 cups of fresh green beans in water until the softness you like. Add teaspoon of butter or bacon grease and 1/4 to 1/3 cup of almonds. Salt to taste. Very good side dish.
