Does anyone know the recipe for those great green beans they always have at Chinese restaurants?Chinese green bean recipe?
Szechuan Green Bean
INGREDIENTS:
1 pound Chinese longbeans (also called yardlong beans or just longbeans)
1 tablespoon garlic, chopped
1 tablespoon ginger, chopped
2 scallions (spring onions, green onions), white parts only
1/2 teaspoon chili paste
1 tablespoon dark soy sauce
1/2 teaspoon sugar
1/4 teaspoon salt, or to taste
Pepper to taste, optional
2 tablespoons vegetable or peanut oil for stir-frying, or as needed
PREPARATION:
Wash the longbeans, drain thoroughly, and trim the tops and bottoms. Cut the longbeans on the diagonal into slices approximately 2 inches long. Chop the garlic, ginger and white part of the scallions. Heat 1 tablespoon oil over medium heat. Add the longbeans and stir-fry until they start to shrivel or ';pucker'; and turn brown (5 - 7 minutes). Remove the long beans and drain in a colander or on paper towels.
Heat 1 tablespoon oil in the wok on high heat. Add the garlic, ginger and scallions. Stir-fry for a few seconds, then add the chili paste and stir-fry for a few more seconds until aromatic. Add the longbeans and the remaining ingredients. Mix together and serve.
Serving suggestion: Szechuan Green Beans would make an excellent side dish to accompany Mapo Tofu.

CHINESE GREEN BEANS
4 c. green beans, fresh or frozen
1 can cream of mushroom soup
1/2 c. celery, diagonally sliced
1 (8 1/2 oz.) can water chestnuts, drained and sliced
1 tbsp. soy sauce
1 (3 oz.) can sliced mushrooms
1 (4 oz.) can pimentos, drained and chopped
3/4 c. chow mein noodles
Combine all ingredients except beans and noodles. Put green beans in 2 quart casserole. Pour combined ingredients over them. Bake covered at 375 degrees for 45 minutes. Remove from oven, stir gently, top with noodles. Bake 10 minutes longer or until beans are tender. Canned green beans may be used. Cut baking time accordingly.

INGREDIENTS
1 cup vegetable oil
13 pounds fresh green beans, trimmed
5 tablespoons minced garlic
5 tablespoons minced fresh ginger root
2 tablespoons kosher salt
1 tablespoon coarsely ground black pepper
2 (8 ounce) bottles black bean sauce
DIRECTIONS
In a large wok, heat oil over medium-high heat. Stir in green beans; cook, stirring frequently, for 1 to 2 minutes. Stir in garlic and ginger; cook, stirring frequently, for 3 to 4 minutes. Season with salt and pepper, and then stir in black bean sauce. Continue cooking until green beans are tender.
