Does anyone know how to make green beans with lemon juice (chilean style). My boyfriend's mom always made him green beans with lemon juice and he talks about it all the time. I don't know if you need to add more than just lemon juice or if that's it. Any help would be greatly appreciated. I can't ask his mom because she only speaks spanish and I want to surprise him. When I was in college in the 80's, I used to get invited to the Foreign Students Association monthly pot lucks. Somebody usually bro't green beans w/ lemon butter. I don't know if that is what he's thinking of or not, but here's what I ended up with.
1/4 cup butter
2 Tablespoons of lemon juice
1/8 teaspoon salt
1/8 teaspoon cayenne pepper
Melt the butter in a pan, add the other ingredients and stir in, let stand in pan a few minutes, pour over the green beans and toss.

Lemon-Walnut Green Beans
Ingredients
3 pounds small green beans
1/2 teaspoon salt
1/3 cup butter or margarine
12 sliced green onions
2/3 cup chopped walnutsm,toasted
1-1/2 tablespoons chopped fresh or crushed dried rosemary
3 tablespoons fresh lemon juice
1-1/2 tablespoons grated lemon rind
Instructions
Sprinkle beans with salt, and arrange in a steamer basket over boiling water. Cover and steam 8 to 12 minutes or until crisp-tender. Plunge beans into cold water to stop the cooking process; drain.
Melt butter in a Dutch oven over medium-high heat; add green onions, and saut茅 until tender. Add green beans, walnuts, rosemary, and lemon juice; cook, stirring constantly, until thoroughly heated. Sprinkle with lemon rind. Serve immediately.
Yield: 12 servings

Cook Time: 5 minutes
1 pound haricots verts (thin French green beans) or regular green beans
2 teaspoons fresh lemon juice
2 teaspoons finely chopped fresh flat-leafed parsley leaves (wash and dry before chopping)
1 teaspoon freshly grated lemon zest
Salt and freshly ground black pepper, to taste
Trim regular green beans if using and in a large saucepan of boiling salted water cook beans until crisp-tender (2 minutes for haricots verts or 3 to 4 minutes for regular green beans) and drain in a colander.
In a bowl toss beans with lemon juice, parsley, lemon zest, and season with salt and pepper
