Fresh green beans are the best! I like to blanch mine in boiling water for 2-3 minutes. Then I put them in a large skillet with melted butter and sort of stir fry them until they are tender. I add salt, pepper and just a dash or two of nutmeg-sounds kind of strange, but the nutmeg really tastes good. As an alternative, try a clove or two of minced fresh garlic instead of the nutmeg sauteed with the blanched beans-yummy! I like to do it this way because you can blanch the beans the night before, refrigerate overnight and then finish with the butter saute just before serving-one less pot on the stove on Thanksgiving day. Just don't make green bean casserole with cream of mushroom soup. Everyone has had it before and noone really really really likes it.

Instead:

Try tossing the fresh green beans in some melted butter and S%26amp;P.

Or

Try tossing the fresh green beans in balsamic vinegar and olive oil, S%26amp;P and some slivered almonds

ADD crumbled bleu cheese for a richer dish.

Or

Try tossing the fresh green beans in olive oil, chopped garlic, salt and pepper and a few squeezes of lemon
Since everyone is telling you the Normal Green Bean Casserole - I though I'd add a couple of options for you!!!

Savory Green Beans --

INGREDIENTS

1 1/2 pounds fresh green beans, rinsed and trimmed

3 ounces coarsely chopped pancetta (or bacon)

1 shallot, thinly sliced

salt and black pepper to taste

DIRECTIONS

Bring a large pot of lightly salted water to a boil. Add the green beans and boil 3 to 4 minutes until just tender. Drain beans and immediately plunge into ice water. Allow to sit in ice water until cold, then drain well, and set aside.

Cook pancetta in a large skillet over medium-high heat until crispy, then set aside. Reduce heat to medium, stir shallots into the pancetta fat, and cook gently until the shallots have turned dark golden brown, about 10 minutes. Place pancetta and green beans in skillet; toss and cook until warmed through, about 2 minutes. Season to taste with salt and pepper before serving.

A Fabulous Green Bean Casserole

(Not the usual Green Bean Casserole)

3 cans Blue Lake cut green beans, rinsed and drained OR frozen green beans*

1 (10 oz) can/jar sliced mushrooms, drained

1 large onion, chopped

1/2 cup butter

1/4 cup flour

1 cup whole milk

1 cup heavy cream

3/4 pound cheddar cheese, shredded**

2 teaspoons soy sauce

1/2 teaspoon Worcestershire sauce

1/2 teaspoon fresh ground black pepper or to taste

1/8 teaspoon Tabasco sauce

1 (8 oz) can water chestnuts, drained and chopped

For topping:

Ritz butter-flavored crackers, crushed or bread crumbs***

melted butter, as needed

If using frozen beans, prepare according to package directions, drain; set aside.

Saute mushrooms and onions in 1/2 cup butter.

Add flour, milk, and cream. Stir in cheese, soy sauce, Worcestershire sauce, pepper, and Tabasco sauce. (Cook until thickened.)

Combine cheese sauce with beans and water chestnuts and place in casserole dish. Sprinkle with cracker crumbs combined with melted butter.

Bake at 350 degrees for 30 minutes.

Variations:

*We used 2 cans of Blue Lake cut green beans and 8 oz. fresh mushrooms, saut茅ed with the onions, and the entire can of water chestnuts.

**We cut back on the amount of sauce just a little bit since we were using fewer green beans, and we used a total of 2 cups of sharp Cheddar cheese, maybe 8 oz.

***We used fresh breadcrumbs instead of the Ritz crackers for the crumb topping.

Notes: This is a wonderful green been casserole, suitable for a large group. Even the teenagers in the family loved it!

I like to do a couple of things with my Green Beans a classic in my house is just fresh string beans simmered on the stove;

3-5 lbs of string beans snapped and rinsed

1-1/2 cups low sodium chicken broth

Fresh or Dried Rosemary (amount is your choice)

1-2 Smoked Turkey pieces

1/4 sliced red onion

Salt and Pepper to taste

Let the smoked turkey, chicken broth, onion, and rosemary come to a boil and simmer for 20 minutes. Add string beans and allow to cook for 1-2 hours or until the green beans are tender.

Another way is to Stir Fry your Rinse beans

1lb String Beans

1 tbs sesame seeds

1 garlic clove chopped

1/4 cup soy sauce

2 tbs honey

Rinse your string beans really well using a wok or if you don't have that, a frying pan will work just fine. Add sesame oil and allow to heat at the bottom of the pan for a few minutes. Toss the green beans, sesame seeds, soy sauce, garlic, and honey into the hot pan for 10 minutes turning often.
There's the ';green bean and mushroom soup'; casserole that's always served - Just look on the back of a can of Cream of Mushroom soup, or Frenches Fried Onion tin.

But why not just serve green beans steamed, tossed with a little lemon juice and salt. Plain, simple, and let the flavor of the beans come out.

Thanksgiving dinner is always so heavy anyway, why not change it up and add some lighter fare?
Here's my fav recipe for green beans

Blanch the beans in boiling water for 2-3 minutes and drain

Place in a frying pan with melted marjorine and fry for a few minutes then add lots of parmasean cheese until melted.

It also works well with Feta cheese, but don't put the Feta in the frying pan..Just toss the cooked beans with the feta once they're done

1 can (10 3/4 oz.) Campbell's庐 Condensed Cream of Mushroom Soup (Regular, 98% Fat Free or 25% Less Sodium)

1/2 cup milk

1 tsp. soy sauce

Dash ground black pepper

4 cups cooked cut green beans

1 1/3 cups French's庐 French Fried Onions

BAKE at 350掳F. for 25 min. or until hot.

STIR . Sprinkle with remaining onions. Bake 5 min.

TIP: Use 1 bag (16 to 20 oz.) frozen green beans, 2 pkg. (9 oz. each) frozen green beans, 2 cans (about 16 oz. each) green beans or about 1 1/2 lb. fresh green beans for this recipe.

For a change of pace, substitute 4 cups cooked broccoli flowerets for the green beans.

For a creative twist, stir in 1/2 cup shredded Cheddar cheese with soup. Omit soy sauce. Sprinkle with 1/4 cup additional Cheddar cheese when adding the remaining onions.

For a festive touch, stir in 1/4 cup chopped red pepper with soup.

For a heartier mushroom flavor, substitute Campbell's庐 Condensed Golden Mushroom Soup for Cream of Mushroom Soup. Omit soy sauce. Stir in 1/4 cup chopped red pepper with green beans.
Campbell's Soup has a recipe for using carrots, not green beans in a casserole, and it's really good. Maybe you should change the vegetable, not the recipe. Go to the Campbell's website and look at all their great vegetable casserole recipes. I know you'll find one there.
cook fresh green beans in boiling water for a few minutes. drain them and then sautee in a frying pan with lots of butter, chopped garlic, dried cherries, and sliced almonds (or pine nuts). salt to taste.

The classic green bean-mushroom soup-onion casserole is always popular. I prefer to steam my beans and toss them with either some sauteed mushrooms, toasted almonds or brown butter and lemon juice!
