Does anyone know a good, healthy and light recipe for green beans? I don't want the same old ';homestyle'; or plain green beans, but something fresh tasting, because i have fresh green beans. thanks!Green Bean Recipe?

STEAM THE BEANS, THEN SPRINKLE ON A LITTLE LEMON JUICE, THEN TOP WITH A SPRINKLE OF PARMESAN CHEESE....
In a 8x8 glass dish-
add 2 cups of diagonally sliced fr eshgreen beans (three cuts on a bean) add one can of diced tomato's, one clove of minced garlic, 2tbsp olive oil, and microwave for about 7 minutes. Top with 1/2 cup of parmeasan cheese and microwave another 2 minutes.
This is real good!
You can add chopped green peppers and celery too.

1-1/2 pounds fresh green beans, trimmed or 3 can of green beans
2 tablespoons red wine vinegar
2 tablespoons olive oil
2 tablespoons Dijon mustard
陆 teaspoon salt

1 cup of grape tomatoes, halved
陆 small red/ purple onion, sliced
2 tablespoons grated parmesan cheese
Place fresh beans in a large saucepan; cover with water. Bring to a boil. Cook, uncover, for 8-10 minutes or until crisp-tender. Or open canned green beans.
Meanwhile, for dressing, whisk the vinegar, oil, mustard, salt and pepper in a small bow. Drain beans; place in a large bowl. Add tomatoes and onion. Drizzle with dressing and toss a coat. Sprinkle with Parmesan cheese.
********CREAMED GREEN BEANS
1 lb. fresh green beans
1 c. celery, sliced
1/4 c. water
2 tbsp. butter
1/4 c. onion, chopped
2 tbsp. celery leaves
2 tbsp. flour
1 3/4 c. milk
4 tsp. lemon juice
Prepare beans and cut into 1 inch pieces. Place beans and celery in pot. Add 1/4 cup water. Cover and simmer 20 minutes; drain. Melt butter, saut茅 onions and celery leaves. Blend in flour. Remove from heat and stir in milk. Return to heat and simmer, stirring until thickened. Stir in lemon juice and vegetables, salt and pepper to taste. Serve over potatoes and carrot cakes.
Put some onion powder in your beans while they are cooking. That adds alot a flavor without calories
250g (9oz) green beans (I like the thin dwarf beans)
Sesame Dressing:
25g (1oz) white sesame seeds
1 tbsp good soy sauce (eg Kikkoman)
1 tbsp sake
1 tsp sugar
1. Clean green beans and cut into 1-inch (2-cm) lengths. Simmer in boiling water (or steam) until cooked to taste. Drain and cool.
2. Toast the sesame seeds in a hot dry frying pan until they start to pop. You want the colour to darken only very slightly. When they're ready, you should be able to smell them!
3. Grind the toasted sesame seed to a rough paste using a pestle and mortar, or in a blender. You don't want a complete puree; there should still be some texture to it. Stir in the soy sauce, sake and sugar.
4. When the beans are cool, arrange them attractively in one large or four individual dishes and drizzle the dressing on top.

150g (6oz, 1 cup) quinoa
250g (9oz) green beans (I like the thin dwarf beans)
2 cloves garlic
300ml (9fl oz, just over 1 cup) vegetable stock
1 x 400g (15oz) can chopped tomatoes
陆 cup (8 tbsp) fresh basil, chopped (optional)
1 1/2 tbsp fresh lemon juice
salt and black pepper to taste
1. Wash the quinoa very well to remove the soapy-tasting substance in the outer coat. Clean the green beans and slice into 1-inch (2-cm) lengths. Chop the garlic finely.
2. Place quinoa and vegetable stock in a saucepan. Bring to boil, cover and simmer 5 minutes. Add green beans and tomatoes with their juice. Simmer 5 minutes more, covered, then add garlic and cook, covered, until beans and quinoa are soft, stirring occasionally.
3. Season to taste with basil, lemon juice, salt and pepper. Serve hot or cold.

Green Bean Medley
Ingredients :
1 Lb green beans
4-5 carrots, sliced
6 potatoes
1 med onion
juice of 1 lemon
olive oil
salt and pepper to taste
fresh parsley
Directions:
Use fresh veggies. Cut and cover with water. Cook about 15 minutes or until tender but not mushy. Drain and add lemon juice and olive oil. Sprinkle with fresh snipped parsley
Serves: 4
Preparation time: 45 minutes
Wash the beans and snap into bite size pieces. Boil with bite size bacon pieces till the desired tenderness (the bacon will 'cook' in the water too). Drain well and add a little butter, salt %26amp; pepper. You can add some red pepper flakes too if you like.

Fresh Green Beans Parmesan
INGREDIENTS:
2 to 3 pounds fresh green beans, trimmed and cut
water to cover, about 3 to 4 cups
1 cup sliced fresh mushrooms
1/3 cup chopped onion
1 can (8oz) sliced water chestnuts, drained
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon basil
1 teaspoon dried Italian seasoning
1/3 cup olive oil
1/4 cup grated Parmesan cheese
PREPARATION:
Combine green beans and water in Dutch oven. Bring to a boil. Cover, reduce heat, and simmer for about 8 t o 10 minutes until tender but still a bit crisp. Drain. Plunge into ice water to stop the cooking process.
Drain beans and set aside. Combine mushrooms, onion, water chestnuts, salt, pepper, basil, and Italian seasoning and oil in a Dutch oven; saut茅 until onion is tender. Stir in beans and cook until thoroughly heated. Sprinkle with Parmesan cheese.
Serves 6 to 8.
