I have never cooked fresh green beans (I've always used canned) I want a good recipe. I have seen people cook them over water and then add seasonings but what are good seasonings to use?I need a good fresh green bean recipe?
Basic Saut茅ed Green Beans
* fresh green beans, 陆 - 1 lbs.
* 2 tbsp olive oil
* 2 cloves garlic
* 2 tbsp minced onion
* salt and pepper, to taste
Fill a large pot with water, and bring it to a boil.While it is heating prepare the green beans for cooking.I like to do so by simply snapping off both ends and leaving the beans whole.If you prefer smaller pieces, snap the beans into inch-long, bite size pieces.When the water is boiling, turn the stove to medium-high and add the fresh beans.Boil for no more than 45 seconds if you are making 陆 lb of beans or if the pieces are very small, and no more than 2 minutes if there is a larger quantity or the beans are whole.Drain the beans in a colander.If you are not saut茅ing them immediately, rinse them under ice cold water to stop the cooking process.
In a large saut茅 pan or a wok, heat the olive oil over medium-high heat.Add the garlic, onion, and green beans together and saut茅 only 2-3 minutes, or until the garlic and onion are lightly cooked.The beans should still be tender-crisp and retain a fresh flavor.Add salt and pepper to taste and remove from heat.Serve while still hot.
Fried Green Beans
2 tablespoons olive oil (we prefer bacon fat for taste)
1 tablespoon butter
2 cups fresh green beans, trimmed and cut to preferred length (we like 'em long)
2 tablespoons lemon juice
1 pinch garlic salt
Salt %26amp; pepper to taste (watch the salt if you use bacon fat)
1 teaspoon lemon zest
Heat the olive oil/fat and butter in a skillet over medium heat. Add green beans, lemon juice and garlic salt. Cook until the beans are tender but still a bit crunchy, approximately 10 minutes. Remove from heat. Salt %26amp; pepper to taste. Add lemon zest over top.
Deep Fried Green Beans
1 pound fresh green beans, trimmed and cut to preferred length
1 cup buttermilk
2 cups all purpose flour
1 tablespoon salt
1/2 tablespoon pepper
1/2 tablespoon garlic powder
Oil for deep frying
Wash and trim green beans. Pat dry. Mix the flour, salt, pepper and garlic powder in bowl. Dip the green beans in buttermilk and then roll in the flour mixture. Deep fry until golden brown. Drain on paper towels.I need a good fresh green bean recipe?
Country Green Beans -- you can also use bacon but cook it first before adding.

1/4 cup chopped onion
1/4 cup chopped cooked ham
1/4 cup butter or margarine
1/4 cup water
1 garlic clove, minced
1/2 teaspoon salt
1/4 teaspoon pepper

Ultimate Green Beans --
.INGREDIENTS
2 slices bacon, diced
1/2 white onion, minced
1 pound fresh green beans, trimmed
1/2 teaspoon red pepper flakes
1/2 cup boiling water
1 tablespoon butter
1 teaspoon lemon juice
salt and pepper to taste

1.Cook the bacon in a large, deep skillet over medium-high heat until crisp, about 10 minutes. Remove the bacon with a slotted spoon and drain on a paper towel-lined plate; return the skillet with the reserved bacon grease to the stove.
2.Cook the onion in the bacon drippings until soft, 5 to 7 minutes. Stir in the green beans and red pepper flakes; cook another 2 minutes. Pour the boiling water into the skillet and cover the skillet immediately; steam for about 15 minutes, shaking the skillet occasionally to keep the beans from sticking to the bottom. Add the butter, lemon juice, salt, and pepper; cook and stir until the butter is melted, 3 to 5 minutes. Sprinkle the cooked bacon over the beans to serve.

Fried Green Beans --

1 quart vegetable oil for frying
2 cups all-purpose flour
4 teaspoons salt
1 teaspoon black pepper
1 teaspoon garlic powder

1.Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Whisk together the flour, salt, pepper, and garlic powder; set aside. Pour the buttermilk into a shallow dish.
2.Thread the green beans onto toothpicks, making bundles of about 5 green beans each. Dip the green bean bundles into the buttermilk, then into the flour mixture. Shake off any excess flour. Fry in the hot oil until the flour turns golden brown, about 4 minutes. Drain on a paper towel-lined plate, and serve hot.
I also give Brussels sprouts this toasty, buttery treatment; I just cook them longer for a tender bite.

1/2 cup chopped toasted black walnuts
2 tablespoons fresh Meyer lemon juice; more to taste

Method
Bring a large pot of salted water to a boil. Add the green beans; cook until tender, about 5 minutes. Plunge them into ice water to stop the cooking. Drain and reserve.
In a large skillet over medium-high heat, melt the butter. Add the shallots and pecans; cook, stirring, until the butter turns a light brown and begins to smell nutty; be careful not to burn it. Add the beans and toss to coat. Cook until the beans are warmed through, about 3 minutes. Add the lemon juice and season to taste with salt and pepper.
I've always cooked green beans the way mom use to, with a ';green bean water';. Yep, that is what she called it, or ';bean water'; for short.
To make ';green bean water';:
Drizzle a tablespoon of olive oil in a sauce pan and heat. Throw in about a 1/2 cup rough chopped raw bacon and saute until cooked, but not crisp. Add 1 large rough chopped shallot and three cloves fresh garlic chopped. Saute until translucent, but do not let the garlic brown.
Add a good tablespoon of dried sweet basil and stir in. Add water (you have to estimate, enough to cover your green beans. You can always add more later. Bring to a boil, reduce heat and simmer for 5-10 minutes. Take off heat and cool while you prepare your green beans. You can cool the ';green bean water'; completely at this point and set aside until needed.
Add 1 pound cleaned, snapped green beans to your ';green bean water';. You need enough water to cover, so add more if you need it. Add a good teaspoon of kosher salt and fresh ground pepper to taste.
Bring to a boil and reduce heat to a simmer. Cook to your preferred done-ness.
I don't know what it is about this, but everyone always loves her green beans.
Garlic salt , celery salt , parsley and lemon make a nice combo , or all spice .

I like - fresh green bean casserole , cream of green bean soup , but my favourite is marinating them in a sweet n sour sesame sauce than grilling them :)

Blanch the beans in hot water for 5 minutes, drain well (pat dry) then saute them in olive oil for 6 - 8 minutes or until crisp tender. During the last 3 minutes of cooking I add minced garlic and sliced shallots. Season with salt and pepper. You could drizzle with a little fresh squeezed lemon juice.
If you have really good green beans I'd simply put them in a skillet with olive oil and season with salt. Delicious!
